Happy Spring!

Do you feel it? The subtle shift. The whispers of change surrounding you as winter comes to a close and spring sneaks in, carrying with her an array of new sensations, flavors, and colors.

There is a distinct shift in energy within our bodies as we transition into spring.

The season for regrowth and renewal, nature is stirring and reawakening after winter’s cold and our bodies have more energy to get up, out, and into the world.

Heat and energy begin to rise from the Earth, building into the hot, summer months with their promise of longer days and beach time fun.

And much like nature begins to shake off the sludge and ice of the winter months, our bodies want to clear any stagnation that has accumulated.

If spring is nature’s party time, let’s get this party started with some #inspo to give your amazing body what she needs to thrive.

Fresh Green Curry Sauce

A beloved recipe from my online group cleanses, this Fresh Green Curry Sauce is a favorite on my weekly dinner circuit. Using fresh herbs & veggies, each perfect to gently warm the body and aid in it’s natural detoxification process, this dish is ideal for spring. 

1 whole bunch cilantro, including stems
1 small onion, quartered
4-5 cloves garlic
1-2 jalapeno peppers, seeded (optional)
1-inch chunk of fresh ginger, peeled
1 lime, juiced
1 teaspoon sea salt, or to taste
1/2 cup water
1 can full fat coconut milk

Place all ingredients into a blender and blend until smooth. Pour into a small pot and simmer for about 10 to 15 minutes, uncovered.

Ideas for using the sauce:

• Combine 1-2 lbs. of cooked sliced chicken thighs and 4 cups cooked brown rice, mix with sauce and heat through

• Quickly sauté a variety of fresh veggies and then pour the sauce over them and simmer until cooked but still crisp.

• Sauté chunks of fish, such as halibut, and spinach. Serve the sauce over the fish and spinach on a bed of rice or quinoa.

• Simmer a fillet of salmon (skin removed) in the sauce.

• Sauté cubed tofu, onions, zucchini, carrots, snow peas and then add to the simmering sauce. Serve over bean thread noodles, rice, or quinoa.

• Sauté chunks of chicken breast and your favorite, seasonal veggies then add the sauce and simmer until cooked. Garnish with thinly sliced basil leaves.

What’s one thing you feel stuck or challenged by? You know…the thing you feel totally unclear about or aren’t sure what your next step should be?

Here’s a 5 minute trick that will not only help you get unstuck, but will also boost your metabolism and creativity at the same time.  To work towards greater clarity, try a Walking Meditation aka Soul Stroll.

This isn’t your average “Zen” form of dropping in, this is an active way to give your brain a break, let your body do the talking and bring all of you—mind, body and spirit– into a state of present, connected awareness.

Here’s what to do:
+Grab your sneakers, headphones, and music source and get outside. (Music is totally optional, here, if you’re feeling overstimulated and want a bit of silence, FYI.)  If you’re using music, choose a playlist that inspires you.

+Put your phone on do not disturb and commit to not checking texts, email, taking calls, etc. for the next bit of time.

+Set an intention for clarity around your challenge and be specific (i.e. “By the end of this time, I’d like to feel clear on x, y, z.”)

+Let your intention GO.

+Set a timer for 5-20 minutes (or longer if you can).

+Walk, walk, walk wherever your intuition guides you, noticing your surroundings, connecting to your body and nature, being fully present.

+When your timer goes off, head back to where you came from, checking back in with your intention.

+Notice the ideas, thoughts, words and clarity that come up now.  If you feel called to write them down or take additional time to journal, go for it!
